Easy-Peasy Beef and Broccoli
There is nothing better in this world than that feeling when you get off work and start to stress about what to make for dinner and then BAM! You remember that you’ve got something going in the crock pot. Now, I am NOT a morning person. So, unless I prepped something the night before, between trying to get my Son fed and myself ready for work, I don’t have the extra time in the morning to chop a bunch of shit to throw in the crock pot. That’s why I love this slow cooker recipe, it only takes four hours to cook! I work remotely, and since most of the population is working remotely right now during the Pandemic, you can put this together over your lunch break and BAM! Same after work dinner prep bliss. This recipe is delicious, and the sauce is sweet enough that your kid might not notice that it is loaded with veggies.
Slow Cooker Beef and Broccoli
Serves: 4
1 lb Beef Sirloin cut into long strips
8oz package mushrooms, chopped (I like Shitake the best)
¼ C Soy Sauce
¼ C Mr. Yoshida’s Original Sweet Teriyaki Marinade and Cooking Sauce
1 ½ C Beef Broth
1T Sesame Oil
4 Cloves garlic, minced
¼ C Brown Sugar
1 Head Broccoli, cut into florets
1 Bell pepper cut into strips
¼ C Cornstarch mixed well with ¼ cup cold water
Combine beef, mushrooms, soy sauce, Yoshida’s, broth, sesame oil, garlic, and brown sugar in your slow cooker. Cook on low for a minimum of four hours, or longer is fine too. 30 minutes before you want dinner to be ready, add in the broccoli, bell pepper and cornstarch. Cook on low for 30 minutes. Serve over rice.
